Easy Taco Soup

Ingredients:

  • 1 lb lean ground beef
  • 2 1/2 cups water
  • 1 oz mild taco seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 15 oz tomato sauce
  • 24 oz mild chunky salsa
  • 20 oz canned six bean medley
  • 15 oz canned corn
  • 10 oz mild Rotel diced tomatoes and green chilies

Optional Toppings

  • 1 cup Fritos corn chips
  • 1 cup shredded mozzarella and cheddar cheese blend

Instructions:

  1. Dump lean ground beef into a large pot over medium-high heat.
  2. Crumble the ground beef well as it cooks.
  3. Once the ground beef is fully cooked, drain the grease from the pot.
  4. Pour the water into the pot with the cooked ground beef.
  5. Add the taco seasoning, salt, pepper, onion powder and garlic powder to the pot.
  6. Stir well.
  7. Add the tomato sauce to the pot and stir well again.
  8. Add the salsa, beans, corn and Rotel to the pot.
  9. Stir well and reduce the heat to medium-low.
  10. Leave the soup to simmer for 20 minutes, stirring occasionally.
  11. After 20 minutes scoop the soup into bowls.
  12. Top with corn chips and shredded cheese if desired.
  13. Enjoy!
