Copycat Olive Garden Chicken Gnocchi Soup

A creamy soup reminiscent of the beloved Olive Garden dish, this recipe combines gnocchi, chicken, and fresh vegetables into a hearty bowl of comfort. The addition of spinach and a touch of cream makes this soup rich and satisfying, perfect for an easy weeknight meal or a family gathering.

Ingredients:

  • Cooked and shredded chicken breast
  • Gnocchi (store-bought or homemade)
  • Carrots, celery, and spinach
  • Onion and garlic
  • Chicken broth
  • Heavy cream or half-and-half
  • Flour (for thickening)

Directions:

  1. Cook and shred the chicken breast. Chop the carrots, celery, spinach, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until fragrant, then add the carrots and celery and cook until softened.
  3. Add the chicken broth, bringing the soup to a simmer. Stir in the shredded chicken.
  4. Create a slurry with flour and water, adding it to the soup to thicken.
  5. Add gnocchi to the pot and cook according to package instructions.
  6. Stir in heavy cream or half-and-half and spinach, cooking until the spinach wilts.
