Ingredients:
- 1 lb ground beef
- 4 tbsp butter, divided
- 1 small onion, chopped
- 3 carrots, diced
- 3 celery stalks, diced
- 3 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups cheddar cheese, shredded
- 1 ½ cups milk
- ¼ cup flour
- Salt and pepper to taste
- Fresh chives or parsley for garnish
Instructions:
- Brown the ground beef in a large pot, breaking it up into small pieces. Set aside.
- In the same pot, melt 2 tablespoons of butter and sauté the onions, carrots, and celery until tender.
- Add diced potatoes and chicken broth. Bring to a boil, then simmer for 10-12 minutes until potatoes are fork-tender.
- In a small skillet, melt the remaining butter, whisk in flour, and cook for 1-2 minutes. Gradually add milk, whisking continuously until thickened.
