Green Chili Chicken Soup

This Green Chili Chicken Soup is a tangy and flavorful dish with a spicy kick from the green chilies and a savory base from chicken, black beans, and corn. It’s a comforting, hearty soup perfect for cooler days.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup corn (fresh or frozen)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Optional toppings: avocado slices, sour cream, shredded cheese

Directions

  1. Cook the Chicken: Sauté onion and garlic in a large pot until the onion becomes translucent. Add chicken breasts, diced green chilies, chicken broth, cumin, and chili powder. Bring the mixture to a boil and let it simmer for 20-25 minutes.
  2. Shred the Chicken: Remove the chicken from the pot and shred it using two forks. Return the chicken to the pot and stir in corn, black beans, and diced tomatoes.
  3. Finish the Soup: Let the soup simmer for another 10 minutes. Add cilantro and lime juice before serving.
  4. Serve: Ladle the soup into bowls and top with optional toppings like avocado, sour cream, or shredded cheese.
