Egg Drop Soup

Egg Drop Soup is a light, comforting dish that’s quick to prepare and full of flavor. This Chinese classic features delicate ribbons of egg in a savory chicken broth, flavored with ginger and soy sauce.

Ingredients

  • 4 cups chicken broth
  • 2 eggs, beaten
  • 2 green onions, thinly sliced
  • 1/2 tsp ginger, grated
  • 1/2 tsp soy sauce
  • Salt and pepper to taste
  • Optional: cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)

Instructions

  1. Prepare the Broth: Bring chicken broth to a simmer over medium heat. Stir in ginger, soy sauce, salt, and pepper.
  2. Add the Eggs: Slowly pour beaten eggs into the broth, stirring gently to form egg ribbons.
  3. Thicken the Soup (Optional): If desired, add a cornstarch slurry to thicken the broth.
  4. Serve: Garnish with green onions and serve hot.
