Ground Beef Zucchini Sweet Potato Skillet

This hearty one-pan dish blends savory ground beef, naturally sweet roasted sweet potatoes, and tender zucchini for a weeknight winner. With minimal prep and maximum flavor, it’s a nutritious and satisfying meal ready in under 30 minutes—perfect for busy evenings or healthy meal prep.

1 lb ground beef
1 tbsp olive oil
1 medium sweet potato, diced
2 medium zucchinis, diced
1 small onion, diced
2 cloves garlic, minced
1 tsp paprika
1 tsp cumin
½ tsp turmeric (optional)
Salt and pepper, to taste
Fresh parsley or cilantro, chopped

Directions:
1 Heat olive oil in a skillet. Add ground beef and cook for 5–7 mins. Remove and set aside.
2 In the same skillet, cook sweet potatoes for 8–10 mins until soft and golden.
3 Add onion, garlic, and zucchini. Cook 5–6 mins.
4 Add paprika, cumin, turmeric, salt, and pepper. Stir and toast 1 min.
5 Return beef to skillet and cook 3–5 mins more.
6 Serve hot, garnished with parsley or cilantro.
