Best soup I’ve had all year! This recipe is so easy too, the slow cooker does the work for you

Ingredients:

1 pound ground beef

4 cups beef broth

12 ounces lasagna noodles

1/2 onion, diced

1 diced bell pepper

1 can (28 ounces) crushed tomatoes

1 can (14.5 ounces) petite diced tomatoes

1 tablespoon Italian seasoning

1 teaspoon minced garlic

1/2 cup ricotta cheese

1 cup shredded parmesan cheese

1 cup shredded mozzarella cheese

PREPARATION:

Brown the ground beef in a skillet until fully cooked, then drain any excess fat

Transfer the beef to the slow cooker.

Add onion, bell pepper, both types of tomatoes, garlic, and Italian seasoning to the slow cooker. Stir well.

Pour in the beef broth and combine everything.

Cover and cook on low for 6-8 hours or high for 3-4 hours.

Break the lasagna noodles into pieces and add them to the soup. Cover and continue cooking on high for about 30 minutes, or until the noodles are tender.

Serve the soup hot, topped with dollops of ricotta, and sprinkles of mozzarella and parmesan cheese.
