Ingredients
- For the fruit mix:
- 450g mixed dried fruit (such as raisins, sultanas, and currants)
- 100g chopped nuts (optional)
- 150ml water
- 150g brown sugar

- 1 tsp baking soda
- For the cake:
- 225g plain flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 large eggs
- Zest of 1 lemon or orange (optional)
Instructions
- Prepare the Fruit Mix:
- In a saucepan, combine the mixed dried fruit, nuts, water, brown sugar, and mixed spice.
- Bring to a boil, then reduce the heat and simmer for about 10 minutes. Remove from heat and stir in the baking soda. Allow to cool.
- Preheat the Oven:
- Preheat your oven to 150°C (300°F). Grease and line a round cake tin (about 20cm).
