Down Banana Cake

Ingredients:

For the Cake:

2-3 ripe bananas, mashed (about 1 cup)

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 cup sour cream or plain yogurt

For the Topping (Optional):

1/2 cup chopped walnuts or pecans

1/4 cup brown sugar

1 tsp cinnamon

PREPARATION:

1. Preheat Oven:

Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or an 8×8 inch square pan.

2. Mix Wet Ingredients:

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the mashed bananas and vanilla extract.

3. Combine Dry Ingredients:

In another bowl, whisk together the flour, baking soda, and salt.

4. Combine Mixtures:

Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Mix until just combined.

5. Prepare Topping (Optional):

In a small bowl, mix together the chopped nuts, brown sugar, and cinnamon. Sprinkle this mixture over the batter in the pan if using.

6. Bake:

Pour the batter into the prepared pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool and Serve:

Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
