2 carrots, chopped
- 2 stalks celery, chopped
1 sweet potato, peeled and chopped
1 can diced tomatoes.
4 cups vegetable broth
1 can chickpeas, drained and rinsed
1 cup green beans, trimmed and chopped
1 tsp dried oregano
1 tsp dried thyme

Instructions
- SAUTE THE AROMATICS
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic. Sauté for 2-3 minutes, until softened and fragrant.
- ADD ROOT VEGETABLES
- Stir in the chopped carrots, celery, and sweet potato. Sauté for about 5 minutes, until the vegetables begin to soften.
- ADD THE LIQUIDS AND BEANS
- Pour in the diced tomatoes (with their juice) and vegetable broth.
Add the drained chickpeas and chopped green beans.
- Stir in the dried oregano and thyme, ensuring all ingredients are well mixed.
- SIMMER THE STEW
Bring the mixture to a boil, then reduce the heat to low.
