Busy Day Soup

Ingredients:

1 lb lean ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juice)

I can (8 oz) tomato sauce

1 can (15 oz) kidney beans, drained and rinsed I cup frozen mixed vegetables (such as peas, carrots, corn)

4 cups low-sodium beef or chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon paprika

Salt and pepper, to taste

1/2 cup small pasta (like elbow macaroni or ditalini) Grated Parmesan cheese (optional for garnish)

Fresh parsley (optional for garnish)

INSTRUCTIONS:

  1. Brown the Meat:

In a large pot or Dutch oven, cook the ground beef or turkey over medium heat, breaking it up with a spoon until

browned and fully cooked, about 5-7 minutes.

Drain any excess fat, then add the diced onion and minced garlic. Cook for another 2-3 minutes until the onion is softened.

  1. Add Remaining Ingredients:

Stir in the diced tomatoes, tomato sauce, kidney beans, mixed vegetables, broth, Italian seasoning, paprika, salt, and pepper. Bring the soup to a boil, then reduce the heat to a simmer. Let it cook for 10-15 minutes to allow the flavors to meld

  1. Cook the Pasta:

Add the pasta to the soup and cook for an additional 8-10 minutes, or until the pasta is tender.

  1. Serve:

Taste and adjust seasoning if needed. Ladle the soup into bowls and top with grated Parmesan cheese and fresh parsley, if desired.
