For the Apple Cider Glaze:
2-3 tablespoons apple cider (adjust for consistency)
½ teaspoon ground cinnamon
1 cup powdered sugar
INSTRUCTIONS:
Prepare the Fritter Bites:
Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
In a large mixing bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and sugar.
In a separate bowl, beat the egg, then mix in the milk, melted butter, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Gently fold in the diced apples.
Spoon the batter into the prepared mini muffin tin, filling each cup about ¾ full.
Bake the Fritter Bites:
Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let them cool slightly in the pan before transferring to a wire rack to cool completely.
Prepare the Apple Cider Glaze:
In a small bowl, whisk together the powdered sugar, apple cider, and cinnamon until smooth.
Adjust the consistency of the glaze by adding more apple cider if needed.
Glaze the Fritter Bites:
Once the fritter bites are cool, dip the tops into the apple cider glaze or drizzle the glaze over them.
Let the glaze set before serving.
