Cajun shrimp pasta withsausage

Ingredients:

•1 pound of large shrimp peeled and deveined

  • 2 tablespoons of olive oil
    1/2 pound of sausage sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow onion sliced
  • 2 cloves of garlic minced
  • 1 cup of chicken broth
  • 1/2 cup of heavy cream
  • 1/4 cup of Parmesan cheese grated
    8 ounces of pasta such as penne or fettuccine
  • Chopped fresh parsley for garnish
    tablespoon of Cajun seasoning

PREPARATION:

  1. To begin, cook the pasta according to the
    package instructions. While the pasta is
    cooking, heat the olive oil in a large skillet over
    medium heat. Add the sausage and cook until it
    is browned on both sides. Remove the sausage
    from the skillet and set it aside.
  2. 2. Next, add the shrimp to the skillet and seasonwith the Cajun seasoning. Cook the shrimp untilthey are pink and cooked through, about 2-3minutes per side. Remove the shrimp from theskillet and set them aside with the sausage.3. In the same skillet, add the bell peppers, onion,and garlic. Cook until the vegetables are tender,about 5 minutes. Add the chicken broth andheavy cream to the skillet and stir to combine.Bring the mixture to a simmer and cook until ithas thickened slightly, about 5 minutes.4. Add the cooked pasta and sausage to theskillet and stir to combine. Sprinkle theParmesan cheese over the top of the pasta andstir until it is melted and well combined. Servethe pasta hot, garnished with chopped freshparsley.
