1 tbsp olive oil

1 onion, chopped

  • 3 cloves garlic, minced

2 carrots, chopped

  • 2 stalks celery, chopped

1 sweet potato, peeled and chopped

1 can diced tomatoes.

4 cups vegetable broth

1 can chickpeas, drained and rinsed

1 cup green beans, trimmed and chopped

1 tsp dried oregano

1 tsp dried thyme

  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. SAUTE THE AROMATICS
  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté for 2-3 minutes, until softened and fragrant.
  1. ADD ROOT VEGETABLES
  • Stir in the chopped carrots, celery, and sweet potato. Sauté for about 5 minutes, until the vegetables begin to soften.
  1. ADD THE LIQUIDS AND BEANS
  • Pour in the diced tomatoes (with their juice) and vegetable broth.

Add the drained chickpeas and chopped green beans.

  • Stir in the dried oregano and thyme, ensuring all ingredients are well mixed.
  1. SIMMER THE STEW

Bring the mixture to a boil, then reduce the heat to low.
