Cheeseburger Soup

Craving the flavors of a cheeseburger but want something lighter and easier to eat? This creamy, cheesy soup brings the best parts of a cheeseburger into a hearty, comforting bowl.

Ingredients:

  • 1 lb ground beef
  • 4 tbsp butter, divided
  • 1 small onion, chopped
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 3 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups cheddar cheese, shredded
  • 1 ½ cups milk
  • ¼ cup flour
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish

Instructions:

  1. Brown the ground beef in a large pot, breaking it up into small pieces. Set aside.
  2. In the same pot, melt 2 tablespoons of butter and sauté the onions, carrots, and celery until tender.
  3. Add diced potatoes and chicken broth. Bring to a boil, then simmer for 10-12 minutes until potatoes are fork-tender.
  4. In a small skillet, melt the remaining butter, whisk in flour, and cook for 1-2 minutes. Gradually add milk, whisking continuously until thickened.
  5. Stir the milk mixture into the soup. Add the cooked beef and cheddar cheese, stirring until the cheese melts.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chives or parsley.
