Classic Baked Meatloaf

Ingredients:

2 lbs (or a mix of and pork)

1 cup breadcrumbs

1 onion, finely chopped

2 cloves garlic, minced

1/2 cup milk

1/2 cup ketchup

2 eggs

2 tsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Topping:

1/2 cup ketchup

2 tbsp brown sugar

1 tbsp mustard

Fresh herbs (like parsley or basil), chopped for garnish

PREPARATION:

Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan.

Mix Ingredients: In a large bowl, combine the ground meat, breadcrumbs, onion, garlic, milk, ketchup, eggs, Worcestershire sauce, thyme, basil, salt, and pepper. Mix thoroughly until well combined.

Shape the Loaf: Transfer the mixture to the prepared loaf pan, shaping it to fit.

Prepare the Topping: In a small bowl, mix together ketchup, brown sugar, and mustard. Spread this mixture over the top of the meatloaf.

Bake: Place the meatloaf in the oven and bake for about 1 hour, or until the meatloaf is cooked through and the topping is caramelized.

Garnish and Serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with chopped fresh parsley or other herbs before serving.
