Creamy Macaroni and Spinach Soup

This easy-to-make soup combines the richness of cream and the nutrition of fresh spinach with the heartiness of macaroni. It’s a simple yet satisfying meal that’s ready in under 30 minutes. This soup is a perfect choice for families and can be adjusted to include additional vegetables or spices.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup uncooked macaroni
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until soft.
  2. Pour in the vegetable broth and bring it to a simmer.
  3. Add the uncooked macaroni, cooking according to package instructions until al dente.
  4. Stir in fresh spinach and cook until wilted.
  5. Add heavy cream and stir to combine. Season with salt and pepper to taste.
  6. Let the soup simmer for a few more minutes and serve hot, optionally garnished with Parmesan cheese.
