Ingredients:
- 1 lb lean ground beef
- 2 1/2 cups water
- 1 oz mild taco seasoning
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 15 oz tomato sauce
- 24 oz mild chunky salsa
- 20 oz canned six bean medley
- 15 oz canned corn
- 10 oz mild Rotel diced tomatoes and green chilies
Optional Toppings
- 1 cup Fritos corn chips
- 1 cup shredded mozzarella and cheddar cheese blend
Instructions:
- Dump lean ground beef into a large pot over medium-high heat.
- Crumble the ground beef well as it cooks.
- Once the ground beef is fully cooked, drain the grease from the pot.
- Pour the water into the pot with the cooked ground beef.
- Add the taco seasoning, salt, pepper, onion powder and garlic powder to the pot.
- Stir well.
- Add the tomato sauce to the pot and stir well again.
- Add the salsa, beans, corn and Rotel to the pot.
- Stir well and reduce the heat to medium-low.
- Leave the soup to simmer for 20 minutes, stirring occasionally.
- After 20 minutes scoop the soup into bowls.
- Top with corn chips and shredded cheese if desired.
