Ingredients:
1 whole chicken (3-4 lbs)
1 jar Prego pasta sauce (about 24 oz)
10-12 cloves of garlic, minced
2-3 tablespoons olive oil
Salt and pepper to taste
Fresh herbs (like rosemary or thyme, optional)
PREPARATION:
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare the Chicken:
Rinse the chicken under cold water and pat it dry with paper towels.
Season the inside of the chicken with salt and pepper.
Make the Garlic Mixture:
In a bowl, mix the minced garlic with olive oil, salt, and pepper. If using, add chopped fresh herbs.
Apply the Mixture:
Carefully loosen the skin over the chicken breast and thighs. Rub the garlic mixture under the skin and over the top of the chicken.
Add Sauce:
Place the chicken in a roasting pan. Pour the jar of Prego sauce over the chicken, ensuring it covers the chicken well.
Roast:
Cover the pan loosely with foil. Roast in the preheated oven for about 1 hour. Remove the foil and continue roasting for another 30-45 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
Rest and Serve:
Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Serve with the sauce poured over the top.
