Growing up, my mom made something that we just called “casserole” because it was the only casserole we ever had in our house.

This Sour Cream Beef Noodle Casserole is a hearty and satisfying dish that combines the comforting flavors of seasoned ground beef, tender egg noodles, creamy sour cream and cottage cheese, all topped with melted cheddar cheese. It’s a perfect family-friendly meal.

Ingredients:

Lean Ground Beef 1 lb
Yellow Onion (chopped) 1/2
Garlic (minced) 2 cloves
Tomato Sauce 2 (15 oz) cans
Italian Seasoning 1 teaspoon
Egg Noodles 8 oz
Sour Cream 1 cup
Cottage Cheese 1 cup
Cheddar Cheese (grated) 1 cup
Kosher Salt To taste
Freshly Ground Black Pepper To taste
Instructions:

Preheat oven and prepare dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick cooking spray.
Brown the ground beef: In a large skillet over medium-high heat, brown the ground beef and chopped yellow onion until the beef is cooked through and no longer pink, about 10 minutes. Break up the ground beef with a spoon as it cooks.
Add garlic and sauce: Add the minced garlic to the skillet and cook for 1 minute more, until fragrant. Stir in the tomato sauce and Italian seasoning. Bring the sauce to a simmer and let it simmer for 5 minutes, stirring frequently. Season to taste with kosher salt and freshly ground black pepper. Remove the skillet from the heat and set aside.
Cook the egg noodles: While the sauce is simmering, cook the egg noodles according to the package directions in a large pot of salted boiling water until al dente. Drain the noodles and set aside.
Prepare the noodle mixture: In a large bowl, stir together the sour cream and cottage cheese until well combined. Add the cooked egg noodles to the bowl and season with kosher salt and freshly ground black pepper to taste. Stir to combine.
Layer the casserole:
Transfer half of the egg noodle mixture to the prepared baking dish, spreading it evenly.
Top the noodle layer with half of the meat sauce, spreading it evenly.
Add the remaining egg noodle mixture over the meat sauce, spreading it evenly.
Top the final noodle layer with the remaining meat sauce, spreading it evenly.
Add cheese topping: Sprinkle the grated cheddar cheese evenly over the top of the casserole.
Bake: Bake in the preheated oven for about 30 minutes, or until the sauce is bubbly and the cheese has melted and is golden brown.
Cool and serve: Remove the casserole from the oven and let it cool for 10 minutes before serving. This allows the casserole to set slightly. Serve warm and enjoy!
