Homemade Cheese with Egg and Milk: A Simple Delicacy

Making your own cheese at home can be a rewarding and delicious experience, especially with simple ingredients like milk and an egg. This method is an easy way to create a fresh, soft cheese without the need for special starters or rennet. Ingredients:

  • 1 liter of whole milk
  • 1 large egg
  • A pinch of salt (optional)

Instructions:

  1. Heat the Milk:
    • Pour the milk into a large pot and slowly heat it on the stove. Bring the milk close to boiling but do not let it boil. Aim for a temperature of about 90°C (194°F), where the milk is steaming and starting to form small bubbles around the edge.
  2. Add the Egg:
    • While the milk is heating, beat the egg in a separate bowl.
    • Once the milk is hot, slowly pour the beaten egg into the milk while continuously stirring. The egg will cook immediately upon hitting the hot milk, and its proteins will help curdle the milk.
  3. Stir and Curdle:
    • Continue to stir gently to encourage the milk to curdle and form curds. This process should take a few minutes. You’ll see the liquid (whey) separating from the solid bits (curds).
  4. Season:
    • At this point, you can add a pinch of salt for flavoring if desired.
  5. Strain the Curds:
    • Set a fine-mesh sieve or cheesecloth over a bowl. Pour the mixture through to separate the curds from the whey.
    • Let the curds drain for about 30 minutes, or until most of the whey has dripped out. For a firmer cheese, you can press the curds gently.
  6. Cool and Store:
    • Once drained, your homemade cheese can be eaten immediately or stored in the refrigerator. It will firm up slightly when chilled.
    • Store the cheese in an airtight container in the refrigerator for up to a few days.
