Homemade chocolate coconut bars.

Ingredients:

For the Coconut Layer:

  • 2 cups shredded unsweetened coconut
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract

For the Chocolate Layer:

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil (or butter)

PREPARATION:


  1. Prepare the Coconut Layer:
    • In a medium bowl, mix the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.
    • Press the mixture firmly into the bottom of an 8×8-inch baking dish lined with parchment paper. Spread it evenly and pack it down.
  2. Chill the Coconut Layer:
    • Place the baking dish in the refrigerator for about 30 minutes to allow the coconut layer to firm up.
  3. Make the Chocolate Layer:
    • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  4. Combine Layers:
    • Pour the melted chocolate over the chilled coconut layer, spreading it evenly. Tap the dish gently on the counter to remove any air bubbles.
  5. Chill Again:
    • Return the dish to the refrigerator for at least 1 hour, or until the chocolate is set.
  6. Cut and Serve:
    • Once set, lift the bars out of the dish using the parchment paper. Cut into squares or bars. Enjoy!
