1 cup fresh strawberries, hulled and chopped
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
PREPARATION:
Prepare the Strawberries:
In a bowl, combine the chopped strawberries with 1 tablespoon of sugar. Let them sit for about 15 minutes to macerate and release their juices.
Blend the Strawberries:
Using a blender or food processor, blend the strawberries until smooth. You can leave some chunks if you prefer a bit of texture.
Whip the Cream:
In a large mixing bowl, whip the heavy cream with an electric mixer on high speed until it starts to thicken.
Gradually add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
Combine:
Gently fold the blended strawberries into the whipped cream until well combined. Be careful not to overmix; you want to keep the mixture light and airy.
Chill:
Transfer the strawberry cream to a serving dish or individual bowls. Chill in the refrigerator for at least 30 minutes before serving.
