Lentil Coconut Soup with Chorizo

For a hearty, meatier twist on the previous recipe, Lentil Coconut Soup with Chorizo combines the rich flavors of chorizo sausage with the creamy, fragrant base of coconut milk and spices.

Ingredients:

  • 1 tbsp olive oil
  • ½ lb chorizo sausage, crumbled
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 carrots, peeled and diced
  • 1 cup dried lentils
  • 1 can coconut milk
  • 4 cups broth
  • Ground cumin, turmeric, paprika, and bay leaf for seasoning
  • Lime juice and fresh cilantro for garnish

Instructions:

  1. Cook the Chorizo: Brown chorizo in olive oil, then remove it and set aside.
  2. Sauté Vegetables: Sauté onions, garlic, and ginger, followed by carrots and celery.
