Low-Carb Chocolate Mousse

Ingredients:

1 cup cottage cheese (full-fat or low-fat)

2 tbsp unsweetened cocoa powder

2 tbsp powdered sweetener (like erythritol or monk fruit)

1/2 tsp vanilla extract

2 tbsp heavy cream (optional, for extra creaminess)

Pinch of salt

Instructions:

Blend the cottage cheese in a food processor or blender until smooth and creamy.

Add cocoa powder, sweetener, vanilla extract, heavy cream (if using), and salt. Blend again until well combined and fluffy.

Taste and adjust sweetness if needed.

Transfer to a bowl and refrigerate for at least 15-30 minutes to chill.

Serve as is or top with whipped cream, shaved chocolate, or berries.

Tip: If you want a more intense chocolate flavor, add a teaspoon of espresso powder or a few melted low-carb chocolate chips. Enjoy!
