Moist & Spongy Vanilla Peach Muffins

Ingredients:

2 large eggs

3/4 Cup sugar

1/3 Cup Oil or melted butter

1 Cup whipping cream

1 teaspoon Vanilla extract

1 3/4 Cup all purpose flour

1 3/4 tsp baking powder

1/4 tsp salt

1 small can peaches, diced (Alternative you can User fresh peaches fruit)

PREPARATION:

In a bowl beat eggs and sugar until doubled in size. Add oil or butter, whipping cream Vanilla and whisk for 30seconds.

In another bowl sifted together flour salt and baking powder. Combine wet ingredients and dry ingredients. Dont overmix.

Add diced peaches, fold using spatula. Fill up prepared Muffins form with the batter about 3/4 full.

Bake in preheated oven 170 degree Celsius for about 18-20 minutes. Cool 10 minutes before serving! Enjoy with your favorite drinks
