Orange Loaf Cake Recipe

Ingredients:

40g candied orange slices, cubed

166g eggs, at room temperature

106g butter

80g granulated sugar

30g chocolate chips

95g cake flour

3.5g baking powder

Freshly squeezed orange juice

Note on Cake Flour

Cake flour used in this recipe refers to low-protein flour, typically with a protein content between 7% and 9% (around 8% in this case), as opposed to self-rising flour.

PREPARATION:

Preheat the oven: Preheat your oven to 329°F (165°C).

Prepare the batter: In a clean bowl, use a hand mixer to beat the butter and sugar together until smooth. Add the eggs one at a time, beating well after each addition.

Incorporate dry ingredients: Gradually add the cake flour and baking powder to the mixture, beating until fully combined.

Add mix-ins: Fold in the chocolate chips and cubed candied orange slices until evenly distributed throughout the batter.

Prepare the loaf pan: Line a loaf pan with parchment paper or grease it with butter to prevent sticking. Pour the batter into the prepared pan, smoothing the top.

Bake: Bake for 40 minutes or until a toothpick inserted into the center of the loaf comes out clean.

Finish and cool: Once out of the oven, brush the top of the cake with freshly squeezed orange juice. Allow the cake to cool completely before refrigerating overnight.
