Ingredients:
- 2 lbs oxtail, cut into pieces
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 tsp thyme
- 1 bay leaf
- 8 cups beef broth
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions:
- Brown oxtail pieces in a large pot until golden on all sides. Remove and set aside.
- In the same pot, sauté onions, carrots, celery, and garlic until softened.
