Oxtail Soup

A deeply flavorful and comforting soup, Oxtail Soup is a traditional dish that’s perfect for a slow-cooked meal. The oxtail becomes tender and flavorful after simmering in beef broth, making it an ideal dish for cozy nights.

Ingredients:

  • 2 lbs oxtail, cut into pieces
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 tsp thyme
  • 1 bay leaf
  • 8 cups beef broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions:

  1. Brown oxtail pieces in a large pot until golden on all sides. Remove and set aside.
  2. In the same pot, sauté onions, carrots, celery, and garlic until softened.
  3. Return oxtail to the pot, then add thyme, bay leaf, and beef broth. Season with salt and pepper.
  4. Bring to a boil, then reduce heat and simmer for 2-3 hours until the oxtail is tender.
  5. Skim off any impurities and shred the meat from the bones.
  6. Return the shredded meat to the soup. Adjust seasoning as needed.
  7. Serve hot, garnished with chopped parsley.
