Pot Roast Over Mashed Potatoes

Ingredients for Pot Roast:
2 lbs chuck roast
1 tablespoon olive oil
1 onion, chopped
2 carrots, peeled and chopped
2 stalks celery, chopped
3 cloves garlic, minced
1 cup beef broth
1 tablespoon tomato paste
1 teaspoon fresh thyme
2 bay leaves
Salt and pepper, to taste
Ingredients for Mashed Potatoes:
4 large potatoes, peeled and quartered
¼ cup milk
2 tablespoons butter
Salt and pepper, to taste
Directions:
Prepare the Chuck Roast: Season the chuck roast generously with salt and pepper. Heat olive oil in a large pot and sear the roast on all sides until browned.
Cook the Vegetables: Add the onions, carrots, celery, and garlic to the pot, sautéing for 5-7 minutes.
Combine and Simmer: Add beef broth, tomato paste, thyme, and bay leaves. Return the roast to the pot and simmer on low for 3-4 hours, or until the meat is tender.
Prepare the Mashed Potatoes: Boil the quartered potatoes until tender. Drain and mash with butter, milk, salt, and pepper.
Serve: Serve the roast over mashed potatoes, spooning the cooking juices and vegetables over the meat.
