Potsticker Soup with Mushrooms & Bok Choy

This Potsticker Soup combines the umami of savory potstickers with the freshness of bok choy and the depth of flavor from mushrooms and a ginger-infused broth. It’s a delicious fusion of Asian-inspired flavors in a comforting soup format.

Ingredients

  • 1 package frozen potstickers
  • 6 cups chicken or vegetable broth
  • 2 cups bok choy, chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional toppings: sliced green onions, sesame seeds

Directions

  1. Cook the Potstickers: Heat sesame oil in a large pot over medium heat. Add garlic and grated ginger, sautéing until fragrant (about 1 minute). Pour in the broth and bring to a gentle boil.
  2. Add Potstickers and Vegetables: Add frozen potstickers and cook according to package instructions (about 5-7 minutes). Stir in sliced mushrooms and chopped bok choy. Add soy sauce and simmer for an additional 3-5 minutes.
  3. Season and Serve: Season with salt and pepper. Serve the soup hot, garnished with sliced green onions and sesame seeds.
