Ingredients:
1 lb ground beef
1 small onion, diced
1 small bell pepper, diced (optional)
1 can (15 oz) sloppy joe sauce (or homemade)
1 can (15 oz) diced tomatoes (drained)
2 cups cooked rice (white or brown)
1 cup shredded cheese (cheddar or your choice)
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Optional toppings: sliced green onions, additional cheese, or crushed tortilla chips
PREPARATION:
Preheat your oven to 350°F (175°C).
Cook the ground beef in a large skillet over medium heat until browned. Drain excess fat.
Add the diced onion and bell pepper to the skillet. Sauté until softened, about 3-5 minutes.
Stir in the sloppy joe sauce, diced tomatoes, garlic powder, onion powder, salt, and pepper. Mix well and let it simmer for about 5 minutes.
In a large mixing bowl, combine the meat mixture with the cooked rice and half of the shredded cheese. Mix until evenly combined.
Transfer the mixture to a greased 9×13-inch baking dish. Spread it out evenly.
Top with the remaining cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
