Ingredients:
4 chicken breasts (without bones and skin)
Toss with salt and pepper for flavor.
1/4 cup of extra-virgin olive oil
6 pieces of chopped bacon
1 thinly sliced tiny onion
minced garlic (three cloves)
8 ounces of chopped mushrooms
fresh spinach, 4 cups
An whole cup of thick cream
Half a cup of Parmesan cheese, grated
one eighth of a teaspoon of basil
Garnish with fresh parsley, if desired
PREPARATION:
To Make the Chicken: Rub salt and pepper onto the chicken breasts on both sides. With the heat set to medium-high, warm the olive oil in a big skillet. Once the pan is hot, add the chicken breasts and cook for 5 to 7 minutes each side, or until cooked through and golden brown. Before setting aside, take the chicken out of the pan.
Crisp Up the Bacon: Toss in the chopped bacon to the same pan and sauté until golden and cooked through. After removing the bacon from the pan, set it on a paper towel-lined dish to soak up any leftover grease. Be sure to save a couple of tablespoons of bacon grease for later use.
The chopped onion should be sautéed for two or three minutes, or until it becomes translucent, as part of the vegetable sautéing process. After approximately 5 minutes of heating, add the sliced mushrooms and minced garlic. Continue cooking until the mushrooms are soft and browned.
Whirl some fresh spinach in a pan and set it aside to prepare for the creamed spinach. Combine the grated Parmesan cheese with the heavy cream and mix to combine. After a few minutes of simmering, add the Italian spice and continue cooking until the sauce thickens. Add salt and pepper according to your preference.
After the chicken breasts have cooked, put them back in the pan with the spinach and mushrooms, and simmer the mixture until it thickens. Top with a little crispy bacon. Allow the chicken to boil through and the flavors to combine by letting everything simmer together for around 5 minutes.
Before serving, ladle the mushroom sauce, bacon, and spinach mixture over the covered chicken. Toss in some fresh parsley for garnish, if you want. Accompany with your preferred side dishes, such as mashed potatoes, rice, or a basic green salad, and serve hot.
