Turkey Vegetable Soup

Turkey Vegetable Soup is a nutrient-packed dish that’s hearty and filling. Featuring tender turkey and an assortment of vegetables, it’s perfect for using up leftover turkey from holiday meals.

Ingredients

  • 1 lb cooked turkey, shredded
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 6 cups chicken or turkey broth
  • 1 can diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup corn kernels
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the Vegetables: In a large pot, sauté onion, carrots, and celery until softened.
  2. Add the Garlic and Broth: Stir in garlic, then add broth and bring to a simmer.
  3. Add Turkey and Vegetables: Stir in shredded turkey, diced tomatoes, green beans, corn, and thyme. Season with salt and pepper.
  4. Simmer and Serve: Simmer for 20-25 minutes until vegetables are tender. Garnish with parsley before serving.
