Tuscan White Bean Soup

This simple yet flavorful soup is full of wholesome ingredients like white beans, carrots, celery, and aromatic herbs. With a light broth and a sprinkle of fresh parsley, this soup is perfect for those looking for a healthy, vegetarian meal that’s packed with flavor.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery, cooking until soft.
  2. Stir in the white beans, vegetable broth, thyme, rosemary, salt, and pepper. Bring to a simmer.
  3. Reduce the heat and simmer for 20-25 minutes to allow the flavors to meld.
