INGREDIENTS
- One packet of potato-based vegan gnocchi
- Mixed mushrooms, one cup
- 2 cups of fresh spinach leaves
- Garlic cloves 2, chopped
- Olive oil 1 tbsp
- One tsp of dried thyme

- Vegan cream 1/4 cup, coconut-based

Gnocchi:
- I use potato-based gnocchi to make this spinach and mushroom dish. Low-carb cauliflower-based gnocchi can also be used.
Mushrooms:
- Incorporate fresh mixed mushrooms such as button, cremini, and shiitake into the wok. Experiment with different sorts of mushrooms.
Spinach:
- We will pick only fresh green spinach leaves. Frozen spinach can also work well.
Cream:
- Choose a vegan-friendly cream option. The cream aids in creating a silky and creamy consistency to the dish.
INSTRUCTIONS
- Put the gnocchi in a nonstick pot and cover it with water (salted).
- Next, boil it according to the packet instructions.
- After that, move the boiled gnocchi to a colander to remove any extra water.
- Meanwhile, we will prepare the other items.
- Now, cut the mixed mushrooms into slices with a knife.
- Then, add olive oil to a nonstick wok and warm it.
- Now, add sliced mushrooms to the wok.
- Simmer it over medium burner heat for about 6/7 minutes.
- Next, add fresh spinach leaves and garlic to the mushrooms.
- Again, simmer all items until the spinach leaves are softened.
- After that, add boiled gnocchi to the mushroom mixture.
- Mix with a spoon until the mixture is well combined with the gnocchi.
- Now, add black pepper, dried thyme, vegan cream, and salt to the mixture.
- Simmer for an extra 3/4 minutes.
- The delicious Mushroom & Spinach Gnocchi dish is ready.
- Serve it on a plate. Top it with nutritional yeast and savor its flavors.
