Velvety Italian Sausage Parmesan Soup

This rich and creamy soup features Italian sausage, Parmesan cheese, and fresh spinach. It’s perfect for a cozy night in or when you need a comforting bowl of something hearty and filling.

Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. Cook the Sausage: Brown the Italian sausage in a large pot, breaking it up into smaller pieces. Remove excess fat if necessary. Add onion and garlic and cook until the onion is soft and fragrant.
  2. Simmer the Base: Add chicken broth, diced tomatoes, heavy cream, and Parmesan cheese. Stir to combine and bring to a simmer.
  3. Finish the Soup: Stir in spinach, dried oregano, and red pepper flakes. Let the soup simmer for 5-10 minutes until the spinach wilts. Season with salt and pepper.
  4. Serve: Ladle into bowls and garnish with fresh parsley.
